Tea Cakes

2 sticks butter
2 1/4 cups of sugar
4 eggs room temp.
5 cups four
2 tsp nutmeg
1 tsp baking soda
1 tsp baking poweder
1/3 cup of milk or buttermilk
2 tsp vanilla

Mix butter and sugar until creamy and smooth. Add eggs one at a time, whip until fluffy. Sift together flour, nutmeg, baking soda and baking powder and set aside.

Gradually add milk and vanilla to creamed mixture. Gradually add flour mixture until batter begins to stiffen. Put dough on a floured board. Roll and cut or spoon drop mixture onto greased cookie sheet 2 inches apart. Bake 375 degrees for 15 to 20 minutes.

Apple Cobbler Deluxe

3 lbs apples, peeled cored and sliced
makes about 8 cups
2 tbsp lemon juice (fresh is best)
1/2 cup flour, unsifted
2/3 cup sugar
1 1/2 tsp ground cinnimon
1 tsp ground nutmeg
1/2 cup chopped walnuts or raisins
1 (16 oz) jar pinapple preserves
1 pie curst stick
vanilla ice cream

Preheat oven to 375 deg..

In a large bowl sprinkle apples with lemon juice and set aside. In a small bowl blen together flour, sugar, cinnamon and nutmeg; toss with apples adding in nuts or raisins. Add pineapple preserves and mix well.

Roll pie crust 1 1/2 in. larger than a 2 qt. baking dish. Place apple mixture into a buttered 2 qt. baking dish and plave crust over mixture. Cut slits near center; seal and flute. Bake 1 hr. or until golden brown. Serve warm with vanilla ice cream.

Banana Nut Bread


2 1/2 cups white sugar
1 cup shortening
3 eggs
1 1/2 cups mashed bananas
3 cups all-purpose flour
1 1/4 cups buttermilk
1 1/2 teaspoons baking soda
1 1/2 teaspoons baking powder
1 teaspoon vanilla extract
1/2 cup chopped walnuts

Directions
Preheat oven to 350 degrees F (175 degrees C).
Cream together shortening and sugar. Add eggs one at a time, beating well after each addition. Mix in bananas, buttermilk, and vanilla. Mix in flour, baking powder, and soda. Stir in nuts if desired. Pour batter into two greased 9x5 inch pans.
Bake for 50 to 60 minutes in the preheated oven, or until a toothpick inserted into the center of the loaf comes out clean.

Choctaw Pumpkin Cake

2 cups flour
1 tsp salt
1 3/4 cups sugar
4 eggs
1 tsp vanilla
1 1/2 cups oil
2 tsp cinnamon
2 tsp baking soda
1 tbsp cocoa
1 (15 oz) can pumpkin
cream cheese icing

Preheat oven to 325 deg.

Mix all inredients together except cream cheese icing and pour into greased 9x13 in pan. Make 30 to 35 min. checking frequently. Let cool. Top with cream cheese icing.

Black Forest Cake

CAKE:
1 box devils food cake mix
1 (3 oz) package cherry gelatin
1 cup water, boiling
1 (20 oz) can cherry pie filling

ICING:

1 (8 oz) container whipped topping
room temp.
1 box vanilla instant pudding
1/2 cup milk

Preheat oven to 325 degrees

Prepare devils food cake according to package directions; let cool. Mix gelatin and water until dissolved. Poke holes all over cake and slowly spoon gelatin over cake.

Spread pie filling on top of cake

to prepare icing, mix together all ingredients and gently spread over cherries. Keep refrigerated until ready to serve.

Orange Pineapple Cake

CAKE:
1 box yellow cake mix
3 eggs
3/4 cup cooking oil
1 sm acn mandarin oranges with juice, chopped

ICING:

1 large can crushed pineapple with juice
1 box instant coconut cream pudding
(can use vanilla pudding)
1/2 tsp vanilla
1 (9 oz) container whipped topping

For best results let cake sit one day before serving.

To prepare cake, combine first four ingredients and mix well. Pour into greased and floured tube pan and bake at 350 deg. for 45 min. let cool and cut in half lengthwise to create a top and bottom layer.

To prepare the icing combine the first three ingredients in a large bowl and mix well. Fold in whipped topping.

Spread icing between layers and cover top and sides; slice and serve.

Apple Pudding Cake With Cinnamon Butter Sauce

CAKE:
1 cup firmly packed brown sugar
1/4 cup butter, softened
1 egg
1 cup all purpose flour
1 tsp baking soda
1 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp salt
2 cups of chopped apples

CINNAMON BUTTER SAUCE:
1/3 cup butter
2/3 cup sugar
1/3 cup half and half
1/2 tsp cinnamon

Heat oven to 350 deg. Grease and 8 in. square pan.

To prepare cake in a large bowl, beat brown sugar and margarine or butter until light and fluffy. Beat in egg. Slowly mix in flour and remaining ingredients except apples. Stir in apples. Spread batter in greased pan and bake for 25 to 35 min. until toothpick inserted in center comes out clean.

To make sauce, in a small sauce pan, combine all ingredients. Heat over medium heat until butter melts and sauce is hot, stirring frequently. Serve warm over warm cake.
